Bakery-Style Cookies

Well, it’s the Monday after the time change. Are your children clutching to your legs and whining? No? Just mine?


Time for a cookie. A big, chewy, buttery chocolate chip cookie.


I do not usually stray away from my beloved Tollhouse Cookie recipe. (“THIS IS WHY YOU ARE BURNING IN HELL! Oh. She was nice to me, but she’s in hell for sure.” Name that show!) It’s perfect. However, Pinterest sucked me in one night and in one of my “I’m 400 weeks pregnant and I can’t roll over without a pep talk let alone sleep” moments I came across a Panera Copycat Chocolate Chip Cookie Recipe over at The Pinning Mama.

I can’t resist a big, chewy bakery style cookie – so I figured why the heck not.

Last night my husband and I watched reruns of Everybody Loves Raymond, played Marbles (one of our favorite games), and split a cookie. By “split” I mean I ate most of it and gave him 2-3 bites.

Verdict? Good!

The only thing I did differently was add 1/2 teaspoon more of salt. I love that salty/chocolatey/buttery combo that all chocolate chip cookies should have! A big bonus to these is you don’t have to bake them all at once. (I didn’t.) You can pre-scoop and freeze them and bake them at a later date. I’m planning on making one more batch to freeze prior to the arrival of our second child.



Oh, I should mention, these are as big as your face. Seriously.

You use a 1/4 measuring cup (or scoop) to measure them out.

I ain’t mad.



You’ll also note that I used chocolate chunks instead of mini chocolate chips like the original recipe calls for. This, again, is just personal preference.

Spring is on its way. Are you excited?

I would be, but I live in Wyoming. Spring-like weather is still a few weeks off for us. In fact the weather forecast is 2-5″ of snow the next two days.

If I were in North Carolina right now I would be warming up my garden beds to plant vegetable seedlings, re-mulching my landscaping, and filling my window boxes with new annuals. So if you are in the southeast and you’re dreading your weekend of yardwork, think of me! I’d love to be among your ranks!
