This is a very simple recipe, but I do need to be honest – it is not healthy. At all. I am one that believes we try our best to eat in moderation during the holidays, but we do eat soul food…and soul food is not healthy. You can try your hand at making this more “diet friendly” if you’d like…I am going to leave it just as it is, Caramel Chocolate Cracker goodness.
Collect your necessary ingredients. Butter, corn syrup, brown sugar, condensed milk, Club Crackers, and semisweet chocolate chips.
Step 2 : line a 9×9 baking pan with aluminum foil. Use 1 tsp of butter to grease foil. **Guessing you could use spray if you wish, this is just to help the caramel not stick.
Step 3: In 9×9 pan, arrange a layer of crackers and set aside.
In a sauce pan, add can (14 oz) of condensed milk, 1/2 cup brown sugar, 2 Tbsp corn syrup, and 3/4 cup of butter together. Bring to a boil over medium heat (keep it at medium and stir a TON as to not burn). Once at a boil, reduce heat to maintain a small boil and simmer for approximately 7 minutes.
Step 6: Once the top layer of caramel has been poured on, sprinkle with chocolate chips. Allow them to sit for 3-5 minutes until they look glossy.
Step 7: Once they are glossy, spread with a spatula to create a top chocolate layer
Step 8: Cover and place into refrigerator for approximately 2 hours, or until chocolate hardens.
