Fruit Pizza

This past weekend we had a baby shower for my sister Samantha, it was Memorial Day weekend and Dr. Seuss Themed, so therefore red, white and blue were the colors of choice for this particular shower. With the exception of cupcakes, meatballs, drinks, and potato chips, I took charge in the food department. One of the things I “slaved” away making was a delicious Fruit Pizza that is all over Pinterest!! This particular fruit pizza consisted of sugar cookie crust, fruit dip icing, blueberries and strawberries. It was light, very yummy, and a HUGE hit at the shower!! Here’s how I did it.

I started with making the sugar cookie crust, Danielle and I decided it would be better (and less time consuming) to make sugar cookie bars, rather than cutting out a ton of circular sugar cookies and dealing with multiple pans and possibly burning a batch! Haha!! I used the Loft House Sugar Cookie Bar recipe for the crust. Kelsea suggested this recipe because we were adding sweet on top of the already sweet sugar cookie, so a less sweet, cream cheese or sour cream based recipe would probably compliment the dessert better! BOY WAS SHE RIGHT!!! These cookie bars were a hit, and I had numerous guests ask for this recipe!

Then I mixed up the “icing” this has been a staple in our family for years!! This was my favorite thing my mom would make us in the summer when it was too hot to eat a real dinner, she would make this dip and cut up a bunch of fruit and she would let us have at it! This fruit dip is very very very easy to make! Simply take a 7oz container of marshmallow cream, and 8oz block of cream cheese (softened) mix together, keep in fridge till ready to eat!! We then got the fruit ready to go to top off the pizza! Went with blueberries and strawberries to keep the red,white and blue theme going! (Thank you Danielle for the help with this part)

We cut up the bars, set them out with the icing, and cut/washed fruit, and allowed the guests to make their own slice of Fruit Pizza!

And there you have it! A very simple and delicious dessert pretty much everyone will love!!
