Whipped Cream Cheese Frosting

Mom does it again.  That’s really all there is to say!  We went to her house for Sunday dinner/my brother’s birthday and she had made ‘Crazy Cake’ cupcakes with what looked like plain vanilla frosting.  We couldn’t have been more wrong.  What she did create was her very own, delicious, recipe for Whipped Cream Cheese Frosting!

She ‘threw together’ one of the most light and delicious icing recipes I’ve ever tasted… and anyone who knows me knows I take my baked goods very seriously.  Thankfully, she was able to remember what she did this time so I can share it with you!
